Hotels Save With Food Waste Recycling


Nowadays, the protection of the environment and sustainable development play an extremely important role for the survival of the planet.
This article talks about how the hotels mentality (here the case of the Hyatt’s hotels on food waste recycling) are evolving and integrating the sustainable development effectively in their management.
The author of this article begins by giving us the positive effects in savings made in 2009 thanks to the program of food waste recycling at the Hyatt Regency Princeton in New Jersey. In order to apply the program procedures as efficiently as possible each Hyatt decided to create its own “Green Team”.  This team is formed by people from all sectors of the hotel, with a common objective to train employees on recycling procedures and finding new ways to improve the process.
After a waste audit made by the Rutgers SWRRG and a consultant, the Hyatt decided to make an agreement with Premier Food Waste Recycling, a subsidiary of Central Jersey Waste and Recycling, in order to take in charge its food waste. All materials accepted include food from the kitchen, restaurant, room service and banquet. The hotel also acquired special blue totes for the food waste, and green totes for commingled recyclables. The recycle food is now composted instead of landfilled.
An important factor in the success of the program is that employees are involved in this program and take it seriously. At the beginning, some of them were confused or didn’t take the time to throw the food in the right bin. After training employees for a couple of weeks, this problem was solved.
According to the statistics, it is possible to save approximately 100$/ton on waste and reduce the volume of trash pulls from weekly to once every three or four weeks.
To conclude, we should all be sensible to the waste recycling especially when we see between other things how the planet is getting polluted. And, some luxurious hotels, which are located on islands and also in the big cities, should follow correctly the procedure of recycling before reaching the point of no return in destroying the planet.

  1. This article is very interesting in the way that global warming is an extremely important matter nowawdays. People get more and more concerned about what is happening to the planet and therefor engage themselves in reducing waste, water expanditure, ....

    I do care about the environment! From my recent experience in a hotel, I can say how much wasting paper was going directly in a trash instead of being recycled... and it makes me sad when I see managers or employees do not pay attention for this kind of thing. But when I see some organizations are encouraging sustainable development it makes things possible :)

    I'm absolutely agreed with your conclusion. During this last couple years we can observe that peoples are much more concern about the planet health. It is a good thing that the Hyatt's hotels are taking into the account this project. In realizing that, I'm sure that the others worldwide hotels will join their vision and it will become as famous as the sustainable tourism.

    I'm convinced that this project will be a must have in hotel's politics in few years.
